Loading WIN7 Pro SP1 over a Non Genuine Win 7 Enterprise

I had a friend of a friend fix my Dell XPS after a HD crash some years back. The guy installed a new HD and loaded Win 7 Enterprise. Recently, I received notification that my copy was not genuine and was asking for a valid product key. Attempted to make contact with the friend of a friend with no success, and no valid product key. I operated that way for a few months and received an update from MS. After that update I have been receiving a blue screen "Service Exception Error" and a crash dump. This continues in a loop allowing me to only get into safe mode.

I purchased Win 7 Pro SP1 in hopes that I can load a valid copy. This is where things get a little sketchy for me. I plan on pulling my documents, pics, music, etc.. onto a thumb drive and installing on my laptop, since I don't have a backup. I can manage that part.

Once I have all the files I need, how should I proceed with the new OS install?
I also have Office 365 and need to reload. Is that permitted?

Forgive me if I have left out critical info for assistance. I'm pretty new at this but relatively familiar with terminology and technology in general.

If you have issues recovering files you can use Linux and a large flash drive to do it,

After than just clean the disk,

I believe you can do the above during install too with the new media just use Repair and command prompt option to clean and mark it active again,

Then just restart and do a clean install,
