Does Nividia have something similar to ATI's Eyefinity software? If so, what is it called and what GPU's does it come with?

To the best of my knowledge no they do not.

Not entirely the same. Though EVGA are releasing a GTX570 that can support 3 monitors on one card, which Nvidia don't do natively with their cards, so it's a custom EVGA card, but to get a game to span all 3 monitors, I think only 3D Vision Surround does that. There might be a way to do it without 3D surround, I'm not sure as I've not properly looked in to it.

I know there is a application I saw a few years back that can emulate 1 screen across multiple and it worked pretty seamless for the guy playing wow on it.

Like Everlong said, EVGA will be releasing a GTX 570 with support for up 3 displays.

Beyond that, no single NVIDIA card can do 3 displays. You'll need 2 for that kind of action.
