There are three internal servers on our inhouse network that we can access by:
Start > Computer > Explorer box with multiple options > ftp (\\SRVRNAME) (Z:)

I get tired of following this little path over and over. Is there an efficient way to create an icon in my taskbar that will open an Explorer window to one of those servers?

create a shortcut to the server and 'pin' that to your taskbar

That much I know how to do. The problem is pulling the string that will create the shortcut. I tried right-clicking the ftp server name and looking in properties; no luck. Is there some specific syntax for shortcuts that don't go to files on my computer but instead to other devices on our network?

Have you tried creating a shortcut from scratch?
Right click on your desktop (or in any other folder) and go Create New > Shortcut.
Then add the filepath as the target (filepath can easily be obtained by clicking in the explorer bar (url bar in the file browser) and copying that, just add the file name and extension to the end of it.

assuming that there is an icon-when the server volume is loaded- (either on your desktop or in an explorer window) just drag it to the taskbar

It turned out to be even easier than you described. Instead of a long text string for the shortcut, it was just Z:\

Now when I drag the working shortcut to the taskbar, I get the red circle with a slash through it ("No don't do this").
