Thoroughly Confused about outlook PST file

We have our email service through an exchange service Office 365. I want to ensure I have a copy of the outlook pst file. I used the export feature but that looses the date. I am told if I back up the PST itself rather than creating one it will allow me to save all that meta data. I cant find a PST file on my computer though

Mostly on exchange you don't have a PST file you have an ost file as all emails are stored on the server not locally like PST. Ost is rebuilt when you connect so you can delete it and it will come back ok. A lot of firms don't allow emails to be stored on PC for security. What are you trying to do?
