If someone feels they must (and in my opinion there is little need to do so), then set services to "manual" AND list which ones you changed. Then if there are any issues, you at least have a list to start tracking down the possible solutions.
Win7, while not perfect, is much better than Vista or XP as far as memory management or service bloat.
The only other recommendation I could make, and this is more personal preference than a real suggestion, is to disable "Remote Registry". Again, it's from personal preference since I've seen someone get hacked that way before many years ago.
