Yes, it shouldn't be any problem. It depends on how your dual-boot is setup, and how you choose to encrypt. For example, you could encrypt only the Windows 7 partition if you like.
Truecrypt sits between the BIOS and your OS, requiring you to provide a password to access the OS/s
Do yourself a favour and make an image of your system as it is using Macrium Reflect Free before you encrypt the system.....just in case.
