Will most of XP programs work on Windows 7 Home Premium?

Home premium doesn't have "XP Mode|", but you can still use XP compatability thingy, am I right?

Also, i don't play games at all on the computer.

I use firefox, word 2003, itunes, etc

Yes, win 7 has an xp compatibility mode. Most but not all will run. things like really old, proprietary apps, games might not.

Applications maybe, but a few games don't agree with Vista/Seven full stop 'The Moment of Silence' is 1, i love that game and can't play it

Depends on the age of the game. If its an old DOS game then you could try DOSBox.
