From everything I've read, xp mode requires a separate install of an antivirus than Windows 7. Is there a way to have XP mode run the Microsoft Security Essentials stored in Windows 7? That way, there are two instances of the MSE processes (one set of them in the XP mode virtual machine), but there is only one copy on disk.

No, unfortunately there wouldn't be a way to do this as they are separate machine from each other. Even though technically one runs on top of another, they each have their own independent applications and services.
