As Irene has stated you could use the auto correct for this but i like to paste pictures into emails

Have you though of downloading emoticons from Office Clip Art on-line:
Search results for "emoticons" in category Emotions - Images and More - Microsoft Office

Once download, you could use 'insert' in your Outlook emails.
