Capture Text from image file

Dear All,
Do you know how to capture text from image file or PDF file that were converted from image file?
I need to capture it because alot of text over there and i don't want to retype it.

Hi there .. If you use Adobe ..

Choose Edit > Take a Snapshot.
Drag a rectangle around the area you want to copy, and then release the mouse button.
