If you extract the contents of your Pro .iso - you can remove the ei.cfg file. Then remake the bootable .iso.
That should allow you to install any edititon.
If you have the paid version of PowerIso ( well worth it imo).

You can simply open the 7 Pro .iso with that, delete ei.cfg /replace it with an edited version, and Save it as a new all edition .iso.
Alternatively, you could edit the ei.cfg to specify the Edition you want to install.
ei.cfg file is inside the “sources” folder of the DVD and looks like this:
[EditionID]
Professional
[Channel]
Retail
[VL]
