I reformatted/reinstalled 7 Ultimate yesterday. I unplugged my other drives before starting the reinstall. Now Windows 7 DOES recognize both drives.....but I don't get the bootloader screen that gives an option to start Older Version of Windows. It simply boots to Windows 7. How can I get Windows XP back on the boot menu?

With disconnecting all other drives before installing, 7 doesn't see them or any OS installed on them. All is not lost though, depending on which key it is (on mine it is F8) you should be able to bring up the bios boot loader during the bios load screen and just select the drive you want to boot from (XP, 7, etc).

Using the bios bootloader instead of the Windows one is the preferred method for quite a few of us here when dual booting, as it makes it much easier and no extra bootloader in the way or having to repair if something goes wrong.

You may find your BIOS uses f12 to list bootable drives.

Just had a quick look at the manual for your board and it should be F12,

<F12>: BOOT MENU
Boot Menu allows you to set the first boot device without entering BIOS Setup. In Boot Menu, use
the up arrow key < > or the down arrow key< > to select the first boot device, then press <Enter>
to accept. To exit Boot Menu, press <Esc>. The system will directly boot from the device
configured in Boot Menu.
Note: The setting in Boot Menu is effective for one time only. After system restart, the device boot
order will still be based on BIOS Setup settings. You can access Boot Menu again to change the first
boot device setting as needed.
