Possible to configure 7 to auto-wipe files?

There is actually an encryption feature in Windows 7. You can select it for individual files/folders. Simply open the file properties dialog, click on the Advanced Attributes button.

Check the 'Encrypt contents to secure data' option.

After pressing OK, make sure you apply the setting to all files and subfolders. Windows will then show you options to save the encryption key.

I don't know if this will wipe deleted files.

One advantage of Truecrypt containers is that you can do as many copies as you think reasonable for backups on different HDDs and CDs/DVDs and you can backup the headers so there is less problems with corruption.

I would add to that, beginning with Truecrypt 6.0 I believe, the design was changed to add support for an embedded backup copy of the header. Just be aware of the issues and advice mentioned at TrueCrypt - Free Open-Source Disk Encryption - Documentation - How To Back Up Securely
