Ok deleting the shadow copies manually via option 2 in the tutorial worked. I really wish i understood why this helped tho. Is the computer looking at the shadow copies for boot first for some reason instead of the SSD?

This is strange indeed. I have a hard time figuring what role the shadows could play in this scenario. But maybe SIW2 has a clue because he suggested that route.
