It all depends on what your needs are.

What do you intend to do on the PC? Email, internet browsing, school work, etc. Would be best suited with Home Premium.

Go with Professional. Ultimate includes a couple things a home user will most likely never use. Look at the one link someone provided that compares the editions and that should give you the insight you need. Home premium seems to be missing to many things...there is a version between the 2 you asked about.

I bought Vista Ultimate and I have never used the addtional different components it has compared to the next tier down. I preordered Win7 a while back when it was half price and it was a no brainer since there was no discount for ultimate and after comparing the features Professional was an obvious choice.

I use Ultimate in both Vista and Win7. The only reason for this is so that I can have the feature sets available when I help out on the web.

You can easily get along with Home Basic, but Home Premium will make you a lot happier. Beyond that you can find free applications to make up for anything that you need that isn't included in Home Premium.
