This is new to me, so I am learning with you. I would go to Disk Management (right click computer, select manage, and in the left column select disk management.) In the lower half of the window, right click the second C drive, and select 'change drive letter or path,' then select change, then select any drive letter suggested by Windows, you will get a warning, ignore the warning and apply. Then reboot and see what happens. You may not be able to boot. If you cant, shut down, disconnect the drives you don't want windows installed on and begin the install. Make sure your personal files are backed up first before you do any of this.
To explain, I've never run raid 1, but you have broken the raid, however, raid 1 is mirrored raid, which means that everything on disk 0 should be an exact duplicate of disk 1. So, they would both have the same data and the same name, and by consequence, the same drive letter. I realize that is a big assumption on my part.
