Do I need the CCC? Can I uninstall it and just keep the drivers updated? Or is there something useful the CCC provides?

CCC overrides game settings to allow higher settings and applies driver optimizations for each game. It also allows you to fine tune video playback optimizations. But, if you don't play games or watch video, it's fairly pointless.

Also, to get CCC now, unless you install one of the older Vista-era Catalyst versions (9.1 - 9.3), you need to have one of the newer "HD" cards. They dropped support for lots of cards recently and haven't mentioned any plans for providing Windows 7 drivers for those cards in the future.
