I have three OSs at the moment - one came with the PC, another is 7 and the third one is the latest copy of 7 installed on a SSD - I am still testing this (not too much free time at the moment). I have the SSD installed at the SATA port 1 (or 0, don't quite remember how they are numbered on the motherboard, that's disk 0 anyways). I have no problem at all booting any of the three, but indeed I may leave only one disk and boot the corresponding OS - I guess that's equivalent to what you're getting by installing with other drives unplugged.
