How can I configure windows update not to remind me of updates
I deliberately have not installed?

In the former version there was a "don't remind me to install" option but not anymore

You can tell update to hide individual updates. They are still there; but you will not see them unless you click on hidden updates.

TaraSWinTeam, in those settings it mentions system and security that should be in control panel.

I don't have that in my control panel.

I've got my control panel set to list view if that matters.
