That's not going to work if the OS is on that drive. You can't just copy everything over. It won't boot.
If that's the case, you're going to have to image the 1tb to the 2tb.
I would enlist the help of a friend's pc which has 64bit Windows. Download and install Macrium Reflect's 64bit imaging app. Bring up the program and go to the tab that lets you produce an offline recovery cd. It's either Tools or Other (its been awhile). Do the full PE cd, not the Linux version. That will also ask you to download the WAIK for W7. Go through all that, because the resulting cd bootable, imaging product is worth its weight in gold.
After you're done producing the cd, your friend can uninstall everything.
Now with both the 1tb and 2tb hooked up (you don't have to initialize the 2tb), pop in the Macrium cd and let it boot up and do the image over to the 2tb. It's fairly intuitive to follow.
