Are all the desktop shortcuts disappearing meaning you have
none at all on reboot or are only NEW shortcuts that you are creating
disappearing on reboot?

This has been a well documented problem in the past.

First of all I would make sure that you have all Windows Updates installed
including Service Pack 1 for Win 7.
Follow these steps:
Click Start Button (Windows Orb)
Click Control Panel
Click System
At the top where it says Windows edition, just below it should say if the Service Pack 1
is in fact installed on your system. Check for and install any other Windows Updates
anyway by going to Control Panel->Windows Update

Second I would follow this tutorial to rebuild your icon cache (thanks to Brink):

Third I would take a look at the same question asked by countless other people
and look to see if you can find similar circumstances to yours:
Search The Knowledge Base

Good luck :)

By the way - check your grammer! The shorcrusts would be disappearing - it's Christmas!! LOL
