Is use of the "print screen" button on the keyboard (and pasting info into image viewer) in anyway considered "screen scraping?" I have used this method to save information in the past like when I pay a bill.

Hi bizmom101, welcome to 7F! :)

I believe the use of print screen and the snipping tool would most definitely be considered screen scraping; But, you shouldn't be worried about copyright infringement, perhaps you are confusing it with content scraping?

https://content-scraping | www.techopedia.com

I keep a running account of bills that I pay online in my word processor or spreadsheet by using the above tools and or just copy and paste, the key action here is using scraping for personal gain [think monetarily], and that's what differentiates screen from content scraping.
It will no doubt be arguable that the way you and I use scraping is still a form of infringement or plagiarism, but I see no harm if it's for our own private and personal use.

The use of quotations in a post is tolerated here at SevenForums only if one uses no more than the first paragraph, and links the quote to a source: as an example here's how I would do it from the screen scraping link from above:

Screen scraping is the process of collecting screen display data from one application and translating it so that another application can display it. This is normally done to capture data from a legacy application in order to display it using a more modern user interface....

If you read the first paragraph of the content scraping definition the key phrase is not giving credit where credit is due.
