Updates install but wont stay installed.

I have 21 updates that seem to install fine in windows update, but when I restart the same 21 updates are still there waiting to be installed, this has been going on for a while now.

On a side note after leaving the computer alone usually when I come back to it it has "recovered from a serious error" although I never actually witness a BSOD, and it never fully goes into sleep mode.

You may not have seen them but you are suffering multiple BSODs

First off if your OCing in anyway stop, return everything to stock settings for the purposes of testing

Run some scans to check against virus or infection

Some of your crashes are related to your graphics drivers
Update your graphics drivers to the latest ones, its best to uninstall old drivers then run http://www.sevenforums.com/tutorials/83814-drivers-clean-left-over-files-after-uninstalling.html then install new drivers from here AMD Graphics Drivers & Software there is an auto detect and install option if your not sure

In addition to Pauly's comments, you appear to have a pice of software called Sendori installed - which is crashing regularly.
Many would regard this as adware, bordering on malware, and I suggest that you uninstall it.

You are also suffering periodic crashes in QuickBooks, FalloutNV, SuperFetch, dxhrml.exe (Deus Ex?? - see Error when exiting Missing Link - Eidos Forums)

I have been playing fallout new vegas, but Desu ex I havent in a while. I am kind of sad to hear that sendori is bad, its auto correct function for typing seems great.

Im still running some test and uninstalling things to see if it helps, Ill let you know how it all turns out.

Finally got the updates to take, it appears that something in Chrome was causing problems. It had been acting funny for a while, causing mouse glitches when it was open and never saving any settings even when I asked it to. I uninstalled it and the next restart the updates stayed.

I havent been able to get windows defender offline to run though, I keep getting an error, 0x800106ba.

That possibly means that you got an old copy of Defender Offline - it's only valid for 10 days, and may give that error after that time.
You should always download a new copy immediately before use.
