I'm using a modded bios with my two 7850's. It works like a charm, and there were very little chances of bricking the cards, since they have a dual bios chip. If something went wrong I could have switched to the secondary bios and reflash the primary with the one I'd saved. So if your cards have dual bios, I'd think it is not very risky to try a modded one.
I'm afraid I'm becoming an OC junky too! And since I'm such a noob (basically ignorant) I do things without much regard for involved risks. So far I haven't bricked or fried anything (fingers crossed).
Ignorance is bliss some times, or so my GF tells me!

Did you notice much performance difference after the BIOS mod? I've got a 7850 as well so I'm tempted. I tried to OC the card but I never managed to get it stable and it made my display cut to a grey screen so much.
Before the modded BIOS I was able to OC my cards to core:1150, mem: 1350, fully stable. That was using Sapphire Trixx with voltage control, and setting the voltage to 1.21V. The limit was 1.225.
With the modded bios and using MSI Afterburner I've reached core:1275, mem: 1475, fully stable at 1.256V, but the cards reach 69ºC really fast. They stay there, but it is a huge increase compared to the 62 I was getting with my previous OC.
To be honest, the only difference I notice is in benchmarks. Gaming wise, they ran great with my previous OC and they run great with the new one. Very difficult to tell the difference.
What OC tool are you using with your 7850? Does it have voltage control? If so, and you've upped the voltage and still can't get it stable, maybe I just wouldn't bother with a modded BIOS. Maybe your card has a limited OC headroom.
